I'm a little confused now having been looking into this more and more.
Surely once you have reached 490/1 defence and are uncritable and then powered on to 102.4% CA there would be no point in putting any more effort into avoidance as crits, crushes and hits have all been pushed off the table and the only thing that can hurt you is when you block.
So presumably at 491 Def/102.4% CA you just want to keep piling on block so that you mitigate more and more of the damage that gets through?
Of course I may have completely misunderstood the whole concept!!
It has now occurred to me that even though block has twice as much value contributing to being un-crushable, damage does get through so you really want to replace as much block as you can with dodge that gives you 0% damage at the best ratio of points -> avoidance rather than taking mitigated damage.
So now that I am un-crushable and un-crittable the only thing left to do is push this mitigated damage out of the equation with pure avoidance?
Am I on the right track now?

Yes, that's correct. Your combat table at the point of being uncrushable / uncrittable is composed entirely of Avoidances and Blocks. Thus the only damaging attacks you receive are partial Blocks.
If you start replacing Block Rating with more pure avoidance stats, you reduce your total damage input - this is the avoidance strategy.
The effective health strategy is to stack up Block Value, Armor, and Stamina at this point, so each hit that gets through knocks off a smaller portion of your total health.
Honestly, both are viable. You don't want to go too crazy on Dodge and Parry though, since every point you knock off of Block is reducing the chance that HS will go off, and if you're not being attacked fast enough to burn it up then it's wasting charges.

I think as a pally it's wiser to go for the avoidance strategy as we start with less stam to start with, although good point about the HS.
120.4% avoidance, obvious type - will sort tommorrow.
Its all a bit of balancing. Upping the avoidance is good yet its just as Zen says as too much avoidance if you go to overboard with it gimps your threat with not blocking as much either with Holy Shield and using up the charges. A bit of balance.
The block value is great to have as if I remember correctly its applied after damage is mitigated by armor when hit so what damage that gets through is futher reduced with more block value. I think in my pre lara gear I have around 290 block value or so. May soon re gem some my gear with more Solid Stars of Elune and a fe Shifting Nightseye gems in place of Enduring Talasite since I have a bit over 500 defense. Have to gem shop on AH on the weekend.
